My good friend and neighbor Kathy Hester is a combination cookbook factory and mad scientist. I like having her on the podcast partly because I get lonely and it's fun to have in-studio guests, and partly because she brings me vegan goodies to share with my family, and partly because she is always pushing the boundaries on how to make healthy plant-based meals easier and tastier and mainstreamier. Her latest book, The Ultimate Vegan Cookbook for Your Instant Pot: 80 Easy and Delicious Plant-Based Recipes That You Can Make in Half the Time, capitalizes on the electric pressure cooker craze sweeping the plant-based community. I basically cook soups and stews in my Instant Pot, and I love that I can get totally absent-minded and nothing bad happens. But Kathy takes everything to the next level, and this book shares clever ways to extend the usefulness of the Instant Pot to many other types of food. Kathy's working on a new book about the latest healthy cooking gadget, the Air Fryer. I have never seen one, or used one, or tasted anything made in one, so this was all new territory to me. We'll see if I catch the bug.
